Honey Glazed Apple Cake
Honey and apple mingle for this great holiday cake.
3/4 cup brown sugar, packed
2/3 cup vegetable oil
3 eggs
3/4 cup honey
3 1/2 cups flour
2 tsp baking powder
1 tsp soda
1 tsp cinnamon
1/2 tsp allspice
1/4 tsp nutmeg
1/2 tsp salt
1/2 cup brewed coffee, cooled
3 Granny Smith apples, peeled, cored, coarsely chopped
1 cup walnuts, coarsely chopped
1/2 cup raisins
Syrup:
1/2 cup honey
1/2 tsp cinnamon
1 tblsp butter
METHOD
Preheat oven to 180 (350°F)
Grease and flour a 25cm (10”) tube pan. In a large bowl beat together brown sugar and oil until well combined. Add eggs one at a time, beating well. Add honey and mix well.
In a separate bowl, combine flour, baking powder, baking soda, cinnamon, allspice, nutmeg and salt. Add dry ingredients to honey mixture in 3 additions, alternating with the coffee. Beat until combined. Stir in apples, walnuts and raisins. Pour batter into prepared pan and bake approximately 1 hour or until done.
Let cake cool 10 minutes on a rack. Meanwhile prepare syrup. Place syrup ingredients in a small pan. Bring to a boil, remove from heat. Leaving cake in pan, place on a plate large enough to catch any syrup that may seep out. Poke a few holes in top of cake with skewer or toothpick. Pour syrup over cake and let cool. Remove cake from pan.
Honey Banana Cake
3 cups flour
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp allspice
1 cup honey
1 cup sugar
1 cup mashed banana (2 medium bananas)
3 eggs
3/4 cup vegetable oil
1/2 cup cold coffee
METHOD
Preheat oven to 180c (350°f). Grease and lightly flour two 23 x 12 x 8cm (9 x 5 x 3”) loaf tins. In a small mixing bowl stir together flour, baking powder, baking soda, cinnamon, ginger and allspice. In a large mixing bowl combine honey, sugar, bananas, eggs, oil, coffee and lemon juice. Beat with an electric mixer on low speed until thoroughly blended. Add flour mixture to wet ingredients and beat on low until combined. Pour batter into prepared pans and bake for 40-50 minutes. Cool cake in pan on wire rack for 10 minutes. Remove cakes from pan and completely cool on wire rack.
Makes 2 loaves.
