Blue berry Clafouti

4 eggs
2 cups milk
1/2 cup all-purpose flour
1 tbsp ground cinnamon
1 cup sifted confectioners' sugar, divided
1/2 tsp salt
2 cups fresh or frozen blue berries
2 tbsp butter

METHOD
Preheat oven to 375 degrees F. Liberally grease a large cast iron skillet or 12-inch fluted flan dish. In a large bowl, beat the eggs and milk together, then gradually stir in the flour, cinnamon, 3/4 cup of the confectioners' sugar and the salt. Beat until smooth. Gently fold in the blue berries. Generously butter a large, heavy skillet or 12-inch fluted flan dish. Bake until golden brown and set, about 45 minutes. Let cool and sprinkle with the remaining 1/4 cup confectioners' sugar to serve.

Serves 8

Blue berry Salad with Honey Nut Dressing

Juice of 1 lemon
1 avocado
3 cup cantaloupe balls
1 cup pineapple cubes
1 cup fresh blue berries
1 cup mayonnaise
8 oz American cheese
2 tbsp honey
2 tbsp sliced almonds
Lettuce

METHOD
Arrange lettuce in bowl. Cut peeled avocado in strips. Sprinkle with lemon juice. Combine fruit. Add to bowl. Garnish with avocado and cheese strips. For dressing, mix the remaining ingredients.

Serves 6

Blue berry Oats Crunch

2 cups quick cooking oats (uncooked)
1 cup firmly packed brown sugar
1 cup flour
3/4 cup butter or margarine, melted
1 tbsp flour
Pinch salt
1/2 cup sugar
3/4 cup water
2 tbsp lemon juice
2 cups fresh blue berries

METHOD
Mix oats, brown sugar and flour. Add butter and mix well. Spread mixture in 8 in. square pan, setting 3/4 cup aside for topping. Combine flour, salt, sugar, water, lemon juice and blue berries in saucepan and simmer for 5 minutes. Pour over oat mixture and sprinkle with remaining mixture. Bake for 35 minutes at 350 degrees. Can be served with ice cream or whipped topping.

Blue berry Flapjacks

8 tbsp honey
4 tbsp brown sugar
3 tbsp vegetable oil
1 ˝ tsp ground cinnamon
3 ˝ cups porridge oats
2 cups fresh blue berries

METHOD
Preheat oven to 350F 18OC. Lightly grease a shallow baking tray. Combine honey, brown sugar, oil and cinnamon in a saucepan and bring to the boil. Allow to bubble for two minutes, without stirring. In a large mixing bowl, combine oats and blue berries. Stir in honey mixture until thoroughly blended.

Tip into baking tray and spread out, gently pressing mixture flat. Bake until lightly brown, about 40 minutes. Cool completely in the tray on a wire rack. Cut into squares or rectangles.

Makes 18

Blue berry and Soya Smoothie

8 fl oz soya milk
6oz firm tofu
1 punnet of blue berries (about 2 handfuls)
1 tsp almond extract
1 tsp vanilla extract
1 banana

METHOD
Whizz all ingredients in blender till smooth. Serve immediately or refrigerate
