Mustard – the Weight Watcher’s Friend

Want to eat more healthily but you are struggling with the bland taste of some low fat foods?

Californian nutritionist and celebrity fitness trainer Nancy Kennedy is a big proponent of mustard as a low-cal condiment – and she has shared her diet secrets and recipes with the likes of Julia Roberts, Kevin Costner, Jennifer Lopez, Steven Spielberg, Lara Flynn Boyle, Elle McPherson, Faye Dunaway and Britney Spears.

She says condiments are a quick and easy way to add flavor as you're preparing healthful ingredients like salmon, skinless chicken, shrimp, vegetables, sandwiches and salads. Favor mustard, basalmic vinegar, and black pepper over sugary dressings.

Clean Out the Pantry – and add Mustard


Take a good look at the frig and pantry, and clean out the items that will tempt you into wrong eating habits:

Dump: yogurt with sugar, cottage cheese and other whole-dairy products, butter, mayo, jellies, sugary cereals, cakes, cookies, muffins, white rice, white flour, processed deli meats, soda, beer and bacon.

Replace with: low-fat dairy items and soy milk, lean proteins, hummus, whole-wheat pita bread, oatmeal, beans, fresh fruits and vegetables, brown rice, mustards, ketchup, nuts, salmon and tuna, high-fiber cereals, tofu, eggs and brown-rice pasta.

Easy Flavor with Mustard
  • Dredge chicken breast in prepared mustard and whole mustard seeds and bake.

  • Add some Dijon mustard to your favorite vinaigrette dressing.

  • Make a delicious cold millet salad by combining the cooked and cooled grain with chopped scallions, baked tofu cubes, garden peas and mustard seeds. Dress with lemon juice and olive oil.

  • Marinate salmon fillets in a combination of Dijon mustard and white wine.

  • Combine prepared mustard with honey and the seasonings of your choice to make a pungently sweet dipping sauce.

  • Add a collage of taste and color to rice by sprinkling some brown, black and white mustard seeds on top.

  • Add mustard to baked potatoes.
