Honeyed Lamb and Lemons
Clover honey is a light, pale gold honey with a clean, mild traditional flavor. It is widely available, crowd pleasing and uncomplicated. You could substitute a citrus honey like orange blossom, fragrant and light amber in color, or lemon blossom.
2 lamb racks
2 tblesp olive oil
¼ cup clover honey plus 2 tablesp (or fresh honeycomb) for garnishing
3 tblesp balsamic vinegar
2 lemons
Pinch salt
1 tblesp brown sugar
2 tblesp white wine
Couscous and fresh sage leaves to serve
Method
Preheat oven to 190˚C. Trim lamb racks of any skin and fat. Brush liberally with combined oil, ¼ cup honey and vinegar. Place in a shallow baking dish and set aside for 10 minutes to marinate. Cut lemons into quarters and toss with remaining honey, salt, brown sugar and white wine. Place in a baking dish and roast with the lamb for 12 to 15 minutes. Rest meat 4 – 5 minutes before cutting into individual sections. Serve lamb and lemons on couscous, sprinkled with sage.

Honey and Nut Filo Knots
New Zealand Kamahi Honey has a musky flavor and would be suitable to use for the honey syrup. You could try sage, another honey valued for hits musky notes or experiment with honey’s infinite variety yourself!.
Serve these sweet spicy morsels with cream for dessert or afternoon tea. Kamahi Honey has a musky flavor.
1½ cups pecan pieces
½ cup brown sugar
1 tsp mixed spice
375 packet filo pastry
200g melted butter
2-3 cinnamon sticks
Method
Preheat oven to 160˚C. In a food processor combine pecans, brown sugar and spice until nuts are finely chopped. Using a pastry brush, butter two sheets of filo on one side and place one on top of the other, butter side up. Sprinkle over 3 – 4 tablespoons of nut mixture and roll up tightly lengthways. Cut in half and twist each half into a knot, folding the ends under. Repeat until you have 12 filo knots. Place on a baking tray and bake 1- 12 minutes until crisp and golden. Drizzle with hot honey syrup and serve warm.
Honey syrup:
Gently heat together honey, lemon and cinnamon sticks. Remove cinnamon before serving.
