Honey Glazed Carrots

Honey and a light touch of ginger completely transforms a warm bowl of steamed carrots.

INGREDIENTS
3-4 carrots, peeled and roughly chopped
2 Tbsp honey
1 tsp ground ginger
Freshly chopped parsley for garnish

METHOD
Steam the vegetables and while still hot, place into a serving bowl with the honey and the ginger. Gently toss and decorate with herbs.

Honey Mustard Chicken Salad

INGREDIENTS
1.5kg chicken
3-4 Tbsp wholeseed mustard
1 Tbsp honey

METHOD

Place the chicken in an oven bag and combine the mustard with the honey and rub all over the chicken. Secure the oven and roast as per instructions on the pack – usually around 90 minutes in a 180degC oven.

Allow the chicken to rest but while still warm, not cold, cut the chicken into pieces for a warm chicken salad.

Combine 4 cups salad mix
2-3 spring onions, finely chopped
1 avocado, sliced
3 rashers middle bacon cooked and chopped into pieces
˝ pawpaw, sliced
2-3 Tbsp of your favourite roasted nuts

Add the warm chicken and drizzle through a dressing made with

3 Tbsp lemon juice
9 Tbsp olive oil
1 Tbsp honey
2 Tbsp whole seed mustard
Salt and pepper


Serve immediately – will serve 4-6 with no left-overs. Serve with a basket of bread.
