Living Well recipes – delicious Honey Dressing and Honey Apple Dessert

Annabelle’s Honey Apple Crisp Dessert


This is one of my favorite desserts – a marriage of apples and honey cooked in a crumble gently so the apples and honey simply melt together and the result is pure magic.
6 large tart apples, peeled and sliced
¼ cup sugar
2 Tbsp lemon juice
½ cup honey
1 cup flour
½ cup brown sugar
¼ tsp salt
1 tsp cinnamon
70g butter
A couple of small knobs of butter

METHOD

Spread the apple slices in a greased baking dish and sprinkle with sugar, lemon juice and honey. Mix the flour, brown sugar, salt and cinnamon in a bowl and cut in the butter until the mixture resembles coarse cornmeal.
Spread the topping over the apples and dot with a little extra butter. Bake 180degC for 60 minutes or until the apples are tender and the crisp is golden brown.

COOK’S TIP

The longer you leave this cooking the better. If you place it in a lower temperature oven and leave in for longer it works just as well - you want the apples to be very soft not al dente.

Honey Fresh Herb Dressing


Honey is added to this very popular dressing that can be drizzled over steamed vegetables, grilled fish and of course provide great flavor lightly coated over salad greens. The honey gives this dressing great depth of luscious flavor.
½ cup oil
¼ cup white wine vinegar
1 tsp salt
2 tsp honey
1 tsp ground black pepper
2 tsp dry mustard powder or 1 large Tbsp whole grain mustard
3 minced garlic cloves
½ cup minced parsley and fresh mint (combined)
3 Tbsp fresh basil

METHOD

Place all the ingredients in a tight fitting jar and shake well. Leave in fridge for at least 24 hours before use.
You can also use your food processor to combine all these ingredients and to save chopping you could place the last three ingredients into the processor bowl first, then pulse and then add remaining ingredients.
